Whisk together in a big bowl – 1 and 3/4 cups flour, 1 Tablespoon baking powder, 1 teaspoon salt, 1/4 teaspoon ground white pepper. I added a pinch of cayenne.
Then stir in four ounces (generous cup) of sharp cheddar cheese and 2 ounces of sharp cheddar cut into tiny cubes. Add 1/3 cup toasted walnuts to the flour cheese mixture.
Whisk together in a medium bowl – 3 eggs, 1/3 cup milk, 1/3 cup olive oil. Stir in 1/2 cup of chives chopped very small.
Pour the wet ingredients into the dry. Fold until all dry ingredients are wet and combined. Don’t work it too much, though. It will be very thick.
Plop it into a buttered loaf pan and on to the middle rack of a 350 degree oven for 35 to 45 minutes. Should look something like this and a thin knife should come out clean.
Let cool on a rack and then enjoy!
